Under the guidance of Chef Renaud Goigoux, the Senses team delivers an exceptional dining experience. Meet the Chef

Renaud Goigoux grew up in Clermont-Ferrand, France. From a young age, he started cooking and developed a deep passion for the world of hotels and restaurants. After gaining international experience in countries including Australia, the Philippines and Switzerland, he settled in Amsterdam in 2014.

He worked in the kitchens of restaurant Daalder and then became sous-chef under Guillaume de Beer and Freek van Noordwijk at restaurant Breda. In 2017, Joris Bijdendijk gave him the opportunity to become sous-chef at the Michelin-starred Rijks*, where he discovered the Dutch terroir and the refined gastronomy that are now an inseparable part of his identity. 

In June 2023, the Van der Meer family entrusted him with Senses, where he is now developing his own unique signature style.

 

 

The vision of Senses

The chef’s cuisine is constantly evolving, drawing inspiration from seasonality, color, and the exploration of ingredients. Technique, classic French sauces, precise cooking, and balance are at its core, enhanced by subtle Japanese influences and a strong focus on plant-based creations.

We serve a tasting menu centered around seasonal products from the North Sea and Dutch soil, complemented by ingredients from local suppliers including carefully selected meat and cheese from the Amsterdam area. In addition, we offer a fully plant-based menu and an à la carte selection.

The team is committed to reducing its ecological footprint by sourcing products delivered by bicycle, minimizing food waste and plastic use, recycling, and consciously selecting sustainable ingredients, with an increasing focus on plant-based options.

By working with the finest seasonal and sustainable produce from the North Sea and Dutch soil, complemented by meat and cheeses from Amsterdam-based suppliers, the team offers a diverse, high-quality culinary experience. Their aim is not only to excel in taste and service, but also to raise awareness around sustainability.

At Senses, we work from a strong plant-based foundation, complemented by carefully selected ingredients. This approach allows us to accommodate a wide range of dietary preferences and allergies, including lactose-free, gluten-free, vegetarian, and fully vegan options.

Our kitchen is flexible and creative, ensuring that every guest can enjoy a tailored culinary experience.
